PEARS

Pears are available from mid August through March.

Pears are a good source of dietary fiber, Vitamin C.

RED BARTLETT  Late August  “Summer Pear” is sweet and creamy.  Its unique color adds a gourmet touch to salads, desserts and cooking.

STARKRIMSON If you can find them buy them.

COMICE  September – March  “Christmas Pear.” are among the sweetest and juiciest of all varieties with a rich flavor and a smooth, snacking, as a poached dessert pear.

FORELLE  October – March  Smallest variety of pears, big juicy sweetness.  Known as a French desert pear. Greata for poaching.

CONCORDE  September – February is a sweet vanilla tasting and juicy cross between the English Conference and Comice pears. Excelant for snacking, deserts, salads, cooking and baking.

ASIAN PEARS   Mid to Late August
Asian Pears are known for their crunchiness and tasty flesh.They are also great chopped into salads or paired with cheese.

KOUSUI Apple-shaped, small to medium-sized brown fruit.

HOSUI Large, yellowish-brown fruit.

Asian pear flesh is crisp, sometimes gritty, and always very sweet. When selecting Asian Pears they should release a strong, sweet scent. Handle carefully as Asian pears bruise easily.

POACHING DESERT PEARS

Remove the pear core using a apple corer, and leave the stem intact, for easier handling.
Peel pears and put them in water with a squeeze of lemon juice so they won’t turn brown.
Heat water, fruit juice or wine to just below the boiling point, and add Honey or Vanilla, Ginger, Cardamom, Cinnamon, Orange or Lemon peel.
When poached in sweet red wine, pears will blush.
