RHUBARB, RUBY RED

Amish rhubarb or pie plant can be stewed, baked in pies, made into a tart sauce.

Can be combined with strawberries, cherries, peaches, blueberries, yogurt and ice cream.
Boil the rhubarb down to a thickened stew.
Use 1 cup sugar for every 2 cups of Rhubarb.
Substitute honey for sugar using half the amount of honey instead of sugar.
Choose Rhubarb stalks that are firm, rounded bottoms not cut, but pulled from the plant, with a little leaf cover.
Remove the leaves and discard. Wash your hands after working with the leaves.
Ingesting the leaves may cause gastric distress in humans and pets.
Rhubarb is available in red and green varieties.
Fresh Rhubarb is usually sold in bunches from Spring to early Summer.
