SWEET  CORN  Yellow, white, and bi-color are tasty local varieties.

Choose corn that feels full up and down the cob and has green husks.

No sense inn peeling the top back as it dosen’t always fill out. Simply cut of the end that displeases you instead of letting it dry out at the stand.

BOILING   Un husked 3-4 minutes in boiling water. Over cooking leads to toughness.

MICROWAVE  In the husk for 4-6- minutes.  Husked wrap in a damp paper towel for 5 minutes.

GRILL  Remove outer leaves, maintain silk. Rinse inner husks in cold water to add moisture. Grill for 8-11 minutes flipping  occasionally to prevent burns. Grilling adds a smokey flavor.

STORING  Lasts about a week in a plastic bags but it will lose flavor daily.
