CELERY ROOT

CELERY ROOTCelery root is a large knobby, edible root of common celery.  Cut off roots, pockets, thick skin, peel, and cube, drop pieces into lemon water, 1 tablespoon lemon juice to 4 cups cold water, to prevent discoloration.

Celery Root can be added to soups and stews if a strong celery flavor is desired.
The root can be peeled, cubed, sliced, use in salads, raw, roasted, soups and stuffing.  Celery root juiced, can be made into cream of celery soup. Celery root paired with potatoes, carrots, parsnips, roasted, soup or au gratin is well worth the effort.
