Roasted Brussel Sprouts & Vegetables

1 pound Brussel Sprouts, rinsed, ends trimmed

3 Garlic cloves

1 teaspoon Lemon juice

2 Tbsp Olive oil

Salt & Pepper

1/4 cup freshly grated Cheese optional.

Preheat oven to 350°F.

Put Brussel Sprouts in a cast iron frying pan, or a roasting pan.

Toss in the Garlic.

Sprinkle Brussel sprouts with lemon juice.

Coat Brussel Sprouts with Olive oil.

Sprinkle generously with Salt and Black Pepper.

Cook for 20 minutes, stir so that the sprouts get coated with the oil in the pan.

Cook for another 10 minutes,  sprinkle with cheese and cook for 3-5 minutes.

Options: You can add other vegetables or prepare them the same way as sprouts.

Use Parsnips, Potatoes, Carrots, Rutabaga, Onions, Golden Beets, Celery Root, Shallots, Ginger in the mix.
