2-3 Golden Beets
2-3 tbsp Extra Virgin Olive Oil
Salt and pepper to taste
Peel and chop golden beets into cubes.
Toss with Extra Virgin Olive Oil.
Place single layer on baking sheet.
Roast 400 degrees for 20-25 minutes or until tender with brown edges.
